Summary: The Food and Beverage Director is responsible for overseeing the entire food and beverage operations within a hotel, ensuring exceptional service standards, quality, and guest satisfaction. This leadership role requires strategic planning, staff management, budgeting, inventory control, and collaboration with other hotel departments to deliver a seamless experience to all guests. The director also focuses on creating a diverse and innovative menu, maintaining high-quality service, and achieving profitability within the food and beverage division.
Essential Functions and Responsibilities:
Leadership & Management:
Supervise and manage the food and beverage department, including restaurants, bars, banquet facilities, room service, and other dining outlets.
Hire, train, and motivate a team of managers, chefs, servers, bartenders, and support staff to ensure high standards of service.
Establish clear goals and performance standards for the team and provide ongoing feedback and coaching.
Foster a positive work environment and ensure compliance with company policies, safety standards, and regulations.
Recruit, hire, supervise, train, and counsel department managers in the efficient, effective and appropriate operations of their departments.
Conduct daily standups, monthly department staff meetings, bi-weekly manager one-on-ones.
Menu Development & Innovation :
Collaborate with the food and beverage team to design creative and appealing menus that meet the tastes and preferences of guests.
Ensure that menu items are consistent with the hotel’s brand and concept.
Stay current with food trends, sourcing quality ingredients, and creating seasonal or special-event menus.
Operational Management:
Oversee daily operations of food and beverage outlets to ensure smooth service and high guest satisfaction.
Monitor guest feedback and resolve any issues or complaints promptly.
Coordinate with other departments, such as housekeeping and front desk, to ensure seamless guest experiences.
Ensure all service areas are clean, organized, and in compliance with health and safety regulations.
Budgeting & Financial Management:
Develop and manage budgets for food and beverage operations, ensuring financial targets are met.
Monitor and control inventory, ordering supplies, and ensuring waste reduction.
Analyze financial reports and adjust operations to improve profitability, such as adjusting pricing, staffing, or menu offerings.
Guest Experience:
Focus on creating memorable experiences for guests through excellent food and beverage offerings and personalized service.
Develop programs to encourage repeat visits, such as seasonal promotions.
Promote a culture of guest-focused service among the food and beverage staff.
Interact with guests and team members on a regular basis to drive guest satisfaction and team member engagement scores; achieve related goals.
Marketing & Promotion:
Work with the sales and marketing department to create promotional campaigns that drive sales in the food and beverage outlets.
Engage in community outreach and networking to promote the hotel’s dining offerings.
Organize special events, wine tastings, or themed dinners to attract guests and enhance the hotel’s reputation.
Compliance & Safety:
Ensure that all food and beverage services comply with local, state, and federal health and safety regulations.
Monitor adherence to proper food handling, sanitation, and hygiene standards.
Conduct regular safety training and ensure all staff is up to date on the latest safety protocols.
Other Areas
Operate property in such a manner as to pass all Quality Assurance inspections as well as regulatory, insurance or other inspections
Ensure all Company and/or brand required training is executed effectively and in the appropriate time frame.
Be familiar with and adhere to Legacy Ventures Service standards as outlined in the Blueprint and other policies / rules of conduct, to include personal appearance / grooming, attendance, and safe / efficient operations.
Perform any other job-related duties as assigned or that may be necessary to operate the department in an appropriately responsible fashion
