The Food & Beverage Director at the Whitewater Center (Whitewater) is responsible for overseeing the operations of all food and beverage outlets at the Whitewater Center. This individual provides leadership for a large salaried team as well as an extremely large hourly and seasonal team. The F&B Director is an on-site, full-time, benefits eligible position who reports directly to the Operations Manager. Responsibilities Implement and maintain standard operational procedures. Menu design and standardization across the facility. Hire, train, lead, and coach FOH and BOH Management. Holds team accountable to quality of service. Ensures that daily walk-throughs are conducted across all outlets. Direct oversight of inventory controls and management. Ensure quality standards for food and beverage production. Maintain a strong presence on the floor at multiple outlets during peak operational hours. Manage labor costs, adjusting staffing levels as needed. Management of revenue worksheets, labor worksheets, and P&L statements. Ensures that all safety and sanitation standards are achieved. Follows and enforces responsible alcohol services policies. Oversees management and reporting of all inventories, product cost, cash handling, and purchasing for the department. Other duties as assigned. REQUIREMENTS Management level experience in a fast-paced, high-volume dining atmosphere. Excellent leadership, management, and communication skills Excellent service skills and professional demeanor. Ability to adjust operations based upon business demands. Flexibility to work evenings, weekends, holidays, and during other Whitewater events as needed.
Physical Demands Must be able to work outdoors for sustained periods of time in all weather and environmental conditions. Must be able to lift and carry at least 50 pounds. Must be able to bend, stand, lean, and kneel on a regular basis and for sustained periods of time. Must be able to safely self-transport over uneven terrain or in a confined space. Must be able to work in shared spaces with other employees and customers. All positions as Whitewater require employees to report and work onsite at Whitewater locations. In addition, the Food and Beverage Department oversees catering for private events and Adventure Dining.
