F&B Assistant Director Starting pay range: $65,000-$70,000
Summary/Objectives: The Assistant Director of Food and Beverage for the Midnight Rose Hotel and Casinos, INC will support the Food and Beverage Director in providing the required leadership and direction within the Food & Beverage Department, ensuring the consistent delivery of memorable culinary experiences while maximizing team performance, department efficiencies and financial performance. Essential Job Responsibilities: Demonstrate commitment to assisting the F&B Director in development, administration and implementation of all standard operating procedures, guest service culture and all initiatives that will evolve assigned Food and Beverage outlet areas to exceed expectations. Ensures that all legal requirements are consistently adhered to including wage and hour and all federal, state, local and gaming laws pertaining to alcoholic beverages, food safety, sanitation and gaming regulations. Passion for exceeding guest satisfaction in each stage of the guest experience. Establishes immediate credibility with guests and staff and leads all staff by example. Demonstrated competency in general accounting, basic mathematics, and report-writing, Excellent organizational and time management skills as well as the ability to work effectively under pressure. Enforces all health and safety/sanitation standards. Assist with Including preventative maintenance and all upkeep as it pertains to kitchen and service areas. Working knowledge of POS system and ability to troubleshoot and solve issues as they arise in the department-to reduce impact on guest service. Ability to recruit, effectively interview and train F&B employees. Train, develop and correct staff as required to ensure all staff operate at a consistent level of performance. Resolve guest complaints in an efficient and courteous manner. Evaluate and review individual and team performance on on-going, first hand basis. Demonstrated Microsoft and Excel skills to be able to update revenue reports and labor tracking. Practices excellent communication skills, shares information with other shifts and management teams through use of the daily logbook or other approved channels. Handles all incidents, safety concerns or guest issues readily, and through the proper channels to ensure maximum guest satisfaction as top priority. Has thorough understanding of all emergency plans, safety and operating procedures/standards-especially with regard to handling guests and maintaining service in the event that an emergency or other issue arises. Follows procedure and reports all incidents or injuries as necessary. Control food and beverage costs, by reviewing portion control and quantities of preparation, minimizing waste and ensuring high quality of products, implement effect control of food, beverage and labor costs, within the departments, which include, Miners Pick, Pint and Platter, Down Under, Dynamite Dick’s Dining Emporium and Banquets. Provides input and ideas on the F&B operation, assists Director in achieving goals set forth by the Executive Team for the overall Food and Beverage operations.
EDUCATION AND/OR EXPERIENCE: ·        Minimum of 5 years’ management experience in F&B and organizing a team for optimal customer service. ·        Multiple-venue/ Outlet experience preferred ·        Graduate of a university/college Hospitality and Food Preparation Program or Hotel and Restaurant Management Program preferred. ·        Comprehensive Knowledge of food and beverage preparation, service standards and guest relations.

Sets high standards/priorities, and demonstrates urgency to achieve critical goals and objectives. ·        Multi-tasking ability and must be a hands-on person.
CERTIFICATES, LICENSES AND REGISTRATIONS: ·        Safe food handler certification (PERFERRED) ·        TIPS certification (PERFERRED) ·        Ability to obtain a COLORADO GAMING LICENSE
PHYSICAL, SCHEDULE AND WORK REQUIREMENTS: Must have the availability to work all shifts, during normal operating hours of the restaurants in addition to being available on an as-needed/on-call basis to cover shifts and emergency demand. Ability to work long shifts, weekends and holidays as needed. Must be able to stand for extended periods. Must have the ability to perform all essential physical requirements of the position with minimal assistance. Must be able to lift up to 30lbs and have ability to bend, stretch and twist. Assist Food Vendor Deliveries to ensure stock ordered is delivered to proper locations based off of order guides while maintaining health codes and proper food handling. Assist kitchens with proper stocking of product and breakdown of boxes and trash to the proper waste and recycling locations
